Course I: Apple & Bacon Winter Tuscan Kale Salad
Tuscan kale massaged with anchovy, yogurt, and lemon dressing. Tossed with winter apples, toasted walnuts, crispy bacon, hardboiled egg, and shaved Parmigiano. Topped with fine breadcrumbs for an extra crunch.
Kale – Yogurt – Balsamic – Garlic – Olive Oil – Lemon – Anchovy – Apples – Walnuts – Bacon – Egg – Cheese – Breadcrumbs – Herbs – Spices
Shake dressing and drizzle over room temperature salad
Course II: Chicken Thighs & Dates in Preserved Lemon & Olive Oil
Bone in chicken thighs, seared for a crispy skin and then slow roasted in extra virgin olive oil, thyme, garlic, and preserved lemon. Served over a bed of citrus with whole dates reconstituted in olive oil, green onion, olives, and shallot.
Chicken Thighs – Olive Oil – Herbs – Garlic – Lemon – Dates – Olives – Onion
Heat oven to 350°F. Heat for 10-15 minutes until warmed through.
Course III: Mezza Rigatoni with Sausage & Mushroom Balsamic Ragu
Crispy trumpet mushrooms and browned sausage, tossed in tomato paste and balsamic to create and unique and savory ragu. Perfectly al dente Mezza Rigatoni is then tossed in this sauce to coat each noodle. Topped with whipped garlic and chive ricotta.
Pasta – Olive Oil – Butter – Mushrooms – Pork Sausage – Red Onion – Garlic – Tomato Paste – Balsamic – Spices – Ricotta – Chives
Heat oven to 350°F. 1 tbsp. of water in the pasta. Heat for 10 minutes. Toss Well.
Course IV: Almond Cream Cake
Delicious white cake with layers of almond pastry cream. Topped with slivered almond and a dusting of powdered sugar
