Course 1: White Scallops with Basil Pesto & Caramelized Onion
Juicy and plump white scallops on top of a bed of springtime pesto with basil, pine nuts, and cheese. Topped off with sweet and full caramelized white onion.
Scallops – Basil – Nuts – Garlic – Parmesan – Olive Oil – Onion
Let scallops come to room temp. Heat oven to 275°F. Put a couple drops of water on the scallops. Cover with foil. Heat for 10-15 minutes.
Course II: Tuscan Kale & Portabella Mushroom Salad with Goat Cheese & Cannellini Beans
Curly kale paired with juicy mushrooms and tossed with fresh lemon, creamy goat cheese, white beans, and homemade baguette croutons. A refreshing and tangy twist on a summer salad.
Kale – Mushrooms – Dried Cranberries – Pistachio – Goat Cheese – Lemon – White Beans – Baguette
Enjoy at room temperature
Course III: Beef Tenderloins with Cherry Chutney
Aged Basmati Rice with Shallots & Spring Peas
Tender and perfectly cooked beef tenderloins complimented by a cherry, strawberry, and mint chutney. This juicy steak pairs with a springtime rice cooked with tender peas and sweet shallots.
Beef Tenderloin – Cherries – Strawberry – Red Onion – Mint – Grape Tomato – Rice – Shallot – Peas – Herbs
Heat oven to 275°F. Heat steak for 20-30 minutes until cooked to 130°F internally.
Course IV: Lemon Pistachio Tart. Buttery Flaky Crust, Filled with Lemon Mousse, Topped with Pistachio Whipped Cream and Sprinkled with Pistachios- made by Holiday Market Bakery
