Course III: Veal Paupiettes et Haricots Verts
Veal specially picked from Holiday Market Meat Shop. Thinly sliced and pounded, rolled in a salty ham stuffing. Seared and topped with a butter & white wine sauce. Green beans sauteed in olive oil, butter, shallots and sweet grape tomatoes.
