Course 1: Mushroom Arancini with Marsala Tomato Dipping Sauce
Oyster and Cremini mushroom risotto shaped into bite size balls, rolled around mini fresh mozzarella bites, breaded and fried until crispy. Served with a tomato reduction with onions and marsala for a little sweetness.
Butter – Onions – Arborio Rice – Chicken Stock – White Wine – Mushrooms – Parmesan – Mozzarella – Breadcrumbs – Egg – Garlic – Olive Oil – Chile Flakes – Tomato – Marsala – Basil – Parsley
Preheat oven to 350°F. Remove side of sauce. Heat arancini for 15 min.
Course II: Penne Rigati with Butternut Squash & Spicy Homemade Sausage
Holiday Market’s homemade Italian sausage cooked until crispy. Butternut squash slightly sauteed in the rendered fat and reduced down in white wine. Perfectly cooked penne pasta tossed with the sausage, squash, parmesan, and arugula.
Pasta – Olive Oil – Sausage – Onion – Garlic – Butternut Squash – Parmesan – Arugula – White Wine – Chile Flakes – Basil – Parsley
Preheat oven to 350°F. Add 1 tbsp. of water to the pasta. Cover with tin foil and cook for 10-15 min. until heated through.
Course III: Balsamic Marinated Flank Steak with Roasted Grape Tomatoes & Mushrooms
Flank steak marinated for 24 hours in balsamic vinegar and herbs. Grilled and topped with a crunchy finishing salt. Served on a bed of grape tomatoes and mushrooms. Tossed in a Calabrian chile paste.
Flank Steak – Garlic – Balsamic – Soy – Basil – Parsley – Mushrooms – Shallots – Grape Tomatoes – Sherry – Beef Stock – Thyme – Butter
Heat oven to 275°F. Heat steak for 20-30 minutes until cooked to 130°F internally. Slice and serve.
