Dinner Menu

Course I: Michigan Harvest Salad with Apples & Roasted Butternut Squash

A perfect starter chock full of everything we love about Michigan fall. Fresh apples, roasted butternut squash, and a tangy sage vinaigrette with a hint of Dijon.

Lettuce – Apples – Butternut Squash – Pecans – Cranberries – Blue Cheese – Apple Cider Vinegar – Oil – Sage – Dijon – Shallots

Pour the dressing over the salad. Toss well and serve at room temp.


Course II: Salmon Bites with Butter Panko Topping & Jasmine Rice Pineapple Chutney

Salmon grilled with lemon and garlic topped with panko mixed with butter, lemon zest, parmesan, and herbs to create a crispy topping. Accompanied by Jasmine rice tossed with grilled pineapple, sweet red bell peppers, and green onion.

Salmon – Chiles – Lime – Orange – Brown Sugar – Onion – White Vinegar – Olive Oil – Spices – Pineapple – Red Onion – Red Bell Peppers – Panko – Lemon Parmesan – Rice – Green Onion

Heat oven to 275°F. Add in 1 tbsp. water and heat for 15 min. until done.


Course III: Holiday Market’s Prime Beef Brisket Braised in Red Wine paired with Sauteed Acorn Squash & Cauliflower

Tender beef brisket seared with mirepoix, mushrooms, chili paste, and anchovies and braised with red wine and beef stock until it’s falling apart and juicy! Paired with tender acorn squash & cauliflower that’s both equal parts umami and sweet.

Beef Brisket – Carrots – Onion – Celery – Mushrooms – Chili Paste – Anchovy – Spices – Red Wine – Beef Stock – Flour – Acorn Squash – Cauliflower – Brown Sugar – Orange Juice

Heat oven to 350°F. Heat for 10-15 minutes until warmed through.


Course IV Apple Cake with Cream Cheese Cinnamon Frosting
