Course I: Lentil Cakes with Cremini Mushrooms & Yogurt Dill Sauce
An incredibly hearty and savory dish. Soaked orange lentils ground together with cremini mushrooms, garlic, white miso, and spices. Gently fried in olive oil until crispy and smelling wonderful! Served with a tangy yogurt, lemon, and dill sauce and finished with fresh micro greens.
Orange lentils – Panko – Egg – Greek Yogurt – Lemon – Garlic – Mushrooms – White Miso – Paprika – Olive Oil – Flour – Greek Yogurt – Dill – Micro Greens
Heat oven to 350°F. Heat lentil cakes for 5-8 min. until heated through. Drizzle sauce and micro greens on top.
Course II: Miso & Maple Glazed Salmon with Soy Reduction over Basmati Rice
Miso paste and a touch of maple syrup with spices and red pepper flakes, painted over salmon fillets and sauteed until crispy and flaky. Adding soy to the glaze after the salmon is done and thickening to form a sweet and savory drizzle. Served over basmati rice with toasted sesame seeds and green onion.
Rice – Rice Vinegar – Maple Syrup – White Miso – Soy Sauce – Spices – Olive Oil – Salmon – Sesame seeds – Green Onion
Heat oven to 350°F. Bake for 10-15 min. until heated through.
Course III: Steak Skewers Marinated in Coconut Milk & Chili Sauce
Tender beef bites marinated in coconut milk, chiles, ginger, and garlic. Grilled and served with roasted tomato & jalapeno sauce with a squeeze of fresh lime juice.
Jalapeno – Lime – Olive Oil – Red Onion – Honey – Ginger – Garlic – Coconut Milk – Rice Vinegar – Beef – Cilantro
Heat oven to 350°F. Heat for 8-10 minutes until heated through.
Course IV: Alfajores- A traditional Argentine Sandwich Cookie filled with Dulce de Leche Cream
