Course I: Grilled Shrimp with PiriPiri Sauce and Heirloom Tomato Rice
Plump shrimp with the iconic sweet, salty, and spicy PiriPiri sauce on a bed of Basmati rice slowly cooked with heirloom tomatoes and spices.
Shrimp – Lemon – Herbs – Red Pepper – Jalapeno – Chilies – Garlic – Onion – Vinegar – Tomatoes – Basmati Rice
Heat oven to 350°F. Heat for 10-15 minutes until warmed through.
Course II: Brandy & Steak Sanduíche with Caramelized Onions & Roquefort
Tender beef fillet seared and flambéed with brandy and lemon. A shallot and garlic cream sauce finishes off the perfectly cooked steak. The brandy and cream soaked steak is thinly cut and put on a crispy baguette smeared with arugula pesto, fresh arugula leaves, caramelized onion, and Roquefort cheese.
Beef Fillet – Butter – Olive Oil – Brandy – Cream – Shallots – Garlic – Onion – Pecans – Lemon – Arugula – Parmesan – Roquefort
Heat oven to 350°F. Heat for 10 minutes until warmed through.
Course III: Grilled Blackened Codfish with Duckfat Fritters & Mushrooms in Red Wine Reduction
Light but hearty codfish with blackened spices, grilled and placed on top of a freshly grated gold potato fritter sauteed and browned in duckfat and mushrooms in red wine and butter reduction.
Codfish – Lemon – Herbs – Potatoes – Chives – Flour – Yogurt – Duckfat – Mushrooms – Spices – Garlic
Heat oven to 350°F. Heat for 10-15 minutes until warmed through.
Course IV Decadent Chocolate Flourless Cake with Fresh Raspberries
Rich Chocolate Flourless Cake , Chocolate Mousse, Fresh Raspberries garnished with Dark and White shaved Chocolate
