Dinner Menu
Course 1: Garlic & Lemon Marinated Camarón served with a Crispy Baguette
Jumbo Shrimp from Holiday’s premiere seafood market. Marinated in garlic, olive oil, lemon, and smoked paprika. Gently sauteed in butter and served with the sauce drizzled over and a crispy baguette for dipping.
Shrimp – Garlic – Olive Oil – Lemon – Spices – Herbs – Butter – Baguette
Heat oven to 300°F. Cover with tinfoil and heat for 10-15 min.
Course II: Flaky Butter Empanadas with Chorizo & Tres Quesos
Sun-Dried Tomato Romesco Sauce
Chef Daniela’s signature empanadas stuffed with crispy chorizo and a three cheese blend, baked until golden. Served with a smoked tomato Romesco sauce for dipping.
Flour – Water – Oil – Chorizo – Cheddar Cheese – Jalapeno – Tomato Paste – Onion – Spices – Herbs – Garlic – Red Pepper – Almonds – Sun Dried Tomatoes – Red Wine Vinegar
Heat oven to 300°F. Reheat for 10 min. until warmed through.
Course III: Saffron Infused Paella with Marinated Calamari and Chorizo
A base of chorizo rendered fat cooked with onion and garlic, plump Paella rice slowly simmered in homemade stock, saffron, and white wine. Topped with calamari slowly stewed tomatoes and wine. Baked until slightly crispy with lemon and green onion.
Rice – Chicken Stock – Saffron – Chorizo – Onion – Garlic – Tomato – Olive Oil Calamari – White Wine – Lemon Juice – Parsley – Green Onion
Heat oven to 350°F. Heat for 10-15 minutes until warmed through.
Course IV: Mexican Brownie
Rich chocolate brownie with Cinnamon and topped with a Cayenne Pepper Chocolate Ganache, prepared by Holiday Market Bakery
