Course I: Crispy Swordfish Involtini with White Wine Butter Sauce
Swordfish rolls stuffed with capers, pine nuts, and sweet olives. Rolled in homemade breadcrumbs and grilled until juicy and crispy. Served with a White Wine butter sauce drizzled over the top along with a squeeze of lemon.
Swordfish – Capers – Pine Nuts – Raisins – Olives – Lemon – White Wine – Butter – Olive Oil
Heat oven to 350°F. Heat for 10 minutes until warmed through.
Course II: Penne alla Norma
A classic pasta with a new twist alla Chef Daniela! Fire roasted eggplant, carrots, onion, and tomatoes are blended together to make a silky sweet and savory sauce that glides over the pasta.
Olive Oil – Eggplant – Garlic – Chiles – Tomatoes – Herbs – Carrots – Onion – Parmesan – Marsala – Penne Pasta
Add 2 tbsp. of water and microwave for 1 ½ minutes.
Course III: Braised Pork Shoulder served with Olive Oil & Garlic Couscous
Braised Pork Shoulder marinated in a Sicilian chili and tomato sauce. Braised with red wine until falling apart. Served on a bed of couscous, plumped with homemade pork stock, garlic, and olive oil.
Pork Shoulder – Tomatoes – Carrots – Onion – Celery – Garlic – Cayenne – Red Wine – White Wine – Pork Stock – Couscous – Olive Oil – Soy – White Vinegar – Herbs – Spices
Heat oven to 350°F. Heat for 10-15 minutes until warmed through.
Course IV Vanilla Tart Shell with Sweetened Mascarpone Cheese and Raspberry Jam
Vanilla Tart Shell with a thin layer of Sweetened Mascarpone Cheese and Raspberry Jam. Topped with a fresh Raspberry.
