Course 1: West Coast Waldorf Salad with Farro & Avocado Lime Vinaigrette
A take on the classic elements of a Waldorf salad, with a California twist. Michigan apples, grapes, and crunchy toasted almonds come together with a tangy, creamy, and rich avocado dressing.
Olive Oil – Farro – Avocado – Garlic – Shallot – Lime Juice – Honey – Apple Cider Vinegar – Apples – Fennel – Grapes – Walnuts – Radicchio
Drizzle the dressing over the salad. Serve at room temp.
Course II: Grilled & Spiced Salmon al Pastor with Pineapple Chutney
Al pastor, deconstructed! Salmon marinated with Chef Daniela’s own Recado Rojo (a traditional Mexican inspired blend of spices), grilled, and topped with the tangy pineapple and sweet pepper chutney we all love with pastor!
Salmon – Chiles – Lime – Orange – Brown Sugar – Onion – White Vinegar – Olive Oil – Spices – Pineapple – Red Onion – Bell Peppers
Heat oven to 275°F. Add in 1 tbsp. water and heat for 15 min. until done.
Course III: Beef Medallion Skewers on top of Crispy Rice with Soy
Tender beef pieces marinated with fresh lime juice, avocado oil, and smoked paprika. Grilled until plump and juicy and served on a bed of rice tossed in ginger, kale, and soy, then fried until crispy and umami and topped with sesame seeds!
Tenderloin – Avocado Oil – Olive Oil – Lime Juice – Spices – Shallot – Sesame Oil – Rice – Scallions – Ginger – Soy – Kale – Sesame Seeds
Heat oven to 300°F. Add 2 tbsp. of water, cover with foil, and heat for 10-15 minutes until done.
Course IV: Lemon Cheesecake with Raspberry Drizzle
