Dinner Menu

Course I: Butter Bean Bisque with Truffle Oil Drizzle & Ricotta Honey Crostini

Creamy, plump white butter beans sauteed with mirepoix and leeks and gently simmered in chicken stock and cream. Blended until smooth and topped with herbs, green onion, and truffle oil. Served with a crispy baguette topped with honey and sea salt ricotta.

White Beans – Carrot – Onion – Celery – Cream – Butter – Olive Oil – Leeks – Garlic – Chicken Stock – Green Onion – Herbs – Truffle Oil – Baguette – Ricotta – Honey

Heat soup stove top until warmed through


Course III: Savory Ratatouille Tart with Winter Herbs & Goat Cheese

Layered fresh vegetables gently roasted with herbs and topped with rustic and savory tomato sauce and goat cheese. Baked together in a flaky tart crust and topped with parsley, basil, and thyme.

Zucchini – Squash – Broccoli – Bell Pepper – Tomatoes – Garlic – Onion – Marsala Parmesan – Herbs – Tart Shell – Goat Cheese

Heat oven to 350°F. Bake for 10-15 min. until heated through.


Course III: Tender Beef Fillet and Trumpet Mushroom Pâte Feuilletée

Puff pastry squares topped with roasted golden potato rounds, a mushroom and mirepoix sauté, sweet peas, and tender beef fillet. Baked together until savory and topped with a smoky gruyere cheese.

Beef Fillet – Potato – Olive Oil – Butter – Peas – Carrots -Onion – Garlic – Mushrooms – Beef Stock – Herbs – Buff Pastry – Cheese

Heat oven to 350°F. Heat for 10-15 minutes until warmed through.


Course IV Chocolate Lava Cake

Decadent chocolate cake filled with rich velvety smooth Chocolate filling
