Michigan Harvest Salad with Apples & Roasted Butternut Squash
A perfect starter filled with everything we love about Michigan fall. Fresh apples, roasted butternut squash, and a tangy sage vinaigrette with a hint of Dijon.
Lettuce – Apples – Butternut Squash – Pecans – Cranberries – Blue Cheese – Apple Cider Vinegar – Oil – Sage – Dijon – Shallots
Pour the dressing over the salad. Toss well and serve at room temp.
White Wine Braised Rabbit with Thyme and Roasted Carrots with Saffron Honey Butter
Juicy pieces of rabbit slow braised with white wine, onion, and lots of fresh thyme. Roasted sweet and savory carrots drenched in a browned butter and honey reduction
Rabbit – Onion – Carrot – Celery – Thyme – Stock – White Wine – Spices – Carrots – Paprika – Chili Powder – Garlic – Butter – Honey – Saffron – Spices – Herbs – Stock
Heat oven to 350°F. Cook until warmed through, around 20 minutes.
Michigan venison braised in fruit forward red wine, pearled onions, sweet carrots, celery, and new baby potatoes
Venison – Wine – Carrots – Onion – Celery – Tomatoes – Baby Yukon Potatoes – Spices – Herbs – Stock
Heat oven to 350°F. Cook until warmed through, around 15 minutes.
